I boned them out individually on one piece but left the cartilage in place on the other. You could use higher up toward the loin for more meat. Proper pork cuts ;) ...

The combination of loin and belly is why true bacon comes in 'sides'. But I'm only doing streaky at the moment because it's all purpose. Much better for cooking with. And modern breeds of pick with lower subcutaneous fat deposits actually make streaky bacon less naughty.

Just an amazing eye for scale reality. The tap. The hose that seems to have weight. The minor splits and roughness in the wood. Definitely a master at work.

I realise you have only limited input and influence Dave, but is there any indication of more releases from the Morgan Plus 8 tooling? Seems a lot of money to have spent for a very few releases, or was it a special commission by Morgan for their centenary?

The original 250 GTO was a thing of beauty (although the proportions are better in the SWB version for me). The '64 release was an ugly travesty.
