My old original honeycomb is flat on one side and rippled on the other. I just laid a steel ruler across it in all directions, and no deviance at all. If you get one that is wavy and uneven, I'd send it back and ask for a flat one. Having to shim your build defeats the purpose of using a honeycomb. IMO I use the flat side for building.
