on the Carrera Analog cars I have, there is a small circuit board between the motor and the guide...
whats the purpose of the board? i didn't expect to see a board on a non-digital car.
I assume i could bypass it if i wanted, but what affect would that have?

Allows you to run the car counter or clockwise

Yes, should be a circuit board with a switch.
The switch allows you to run the car in either direction instead of having to switch the wires on the guide or motor.

In some older Carrera cars the analog board had hookups on it to run lights. That analog board is shaped like the common digital chip except it does not have the LED (sensor?) and had the number: 8888 on it. IIRC

I have the board from the Carrera Corvette C7R before me now and besides the reversing switch it also includes two chokes that are part of the RFI filter circuit.
