There was a BBQ contest team from Arkansas that specialized in young goat. Wonderfully tender, great flavor. That was their contest piece, what they gave away to visitors was Arkansas Round Steak. Its just high quality bolonga in the whole log, slow cooked on a spit until all the fat has rendered out of it. Its served in 1/2 inch slabs with a sweet sauce. Indescribably delicious. You'd never believe it was old fashioned delicatessen bologna.

I take 2 Tbs of butter Tbs of brown sugar 2Tbs soy sauce bring to boil and let simmer a few minutes. Then grill and spoon the sauce on as you go like its bbq sauce.

I am a young 47 but my Dad is 93 so I am quite "up" on the 70s. And yeah, WKRP is a fine fine show. As God is my witness. LOL.
