Firin' up "Old Smoke"

My son has to leave tomorrow, so we just had to fire up the old grill.

Nice tri-tip going. Has my special rub along with a hint of Montreal all rubbed down.
Hard lump charcoal with a good sprinkling of applewood...

Let it roll...

IMHO better than a brisket. Around here the brisket has too much fat and the price point makes you wonder if it was from the LAST cow.
Tri-tip is half the price and if done properly, just as good if not better.

I see it the same way. But tri-tips I get are half that size. I save briskets for corned beef, so I can scrape all the fat off after its cooked. But even briskets come in different cuts. For slow cooking on the grill, it needs to be a flat cut for me. All the fat is in one spot where I can get rid of it after cooking.

I don't like to complain but, do you know what this post caused me yesterday? Here's the scenario, I'm eating my lunch, a cold meat sandwich, and checking out the new posts here on HRW when I come across this posts. Golly Gee, that chunk of meat looked so much better than my cold meat sandwich and there was nothing I could do but to continue eating that Cold Meat Sandwich. But on a good note, I could imagine how well that smoke was smelling. Now I must wait until this weekend to burn a side of beef and enjoy.:)

Shoot, if I had your money, I'd burn mine.
You never heard about "leftovers" in your lifestyle. But it's what us regular folks do with the food we did not eat. It's still good, and in some cases BETTER the day after :)
