What a great day to fire up the old smoker...

It's just the two of use so this little snack size brisket will be just fine :)

Well we've been told to stock up on SPF30 as it will be in the 80's this weekend.
Does your smoker have an insulated firebox?

That's the leanest brisket I have ever seen. Is this from that same butcher with the huge pork steaks? I'm hungry all of a sudden.

Not insulated, but sealed pretty good :)
It is a lean cut. It's another shop we like to use in Strafford, MO. really nice store and the folks that work there know what they are doing.
It's almost done...time for me to start the Southwest fried taters and cheese and garlic rolls.
Hopefully it turns out....it's Friday and The General has had a tough week. And you guys know the sayin' "If Mama ain't happy..." :pray:

Yep. Been there. But I have to say, looking after my wife after a rough day or week for 30 years was easy compared to the 10 years or so since she's been sick. But deviled crab, mashed potatoes and fresh corn still do their magic, so far.

That brisket is just for you Harry. Where's the General's?? :laughing-rolling: Sure does look good, I'm sure you'll share. Nothing like a BBQ to help winter go away. :)

If I didn't BBQ in the snow I think I would only have 4 months to do it lol. My smoker works great in the cold weather. Super easy to stabilize the temp in cold weather. I think it actually works better. I did a 18 hour pork shoulder for last new years eve. It was -30 out.

It was wonderful as usual! I even let him sleep in the house since he fixed such a great dinner and it was sleeting and snowing again. This morning looks a lot different than the pic he posted.
