When I had my Scalextric track, I used latex caulk to glue the track to the table surface. The latex comes off easy and is easy to wash up. Second, only put a few small dabs per track part.
I would assemble a few parts, flip them, apply some caulk, flip them back, position them, and then put a book on each part to hold it for a few hours. I did the entire track in one night.
