Is that supposed to be real, or is that a British joke/slam against us Southern BBQ'ers? The prices on that sign are in British Pounds, and it looks like the cook gets burned feet from those stacks coming out below. I do like the hot boxes up top, though. You don't see those much on the pro cookers. Its the one thing I really miss about my old cooker. Those hot boxes are what makes good BBQ into fantastic BBQ, especially ribs. Are there other pics of this thing?

Aha! Those big things are vents. They must be controlled from somewhere else because that's way more air than you want. I don't get the hotboxes on top unless its for fuel storage and prep. Some folks at the BBQ contests would warm their fuel before adding it when they were cooking large cuts. It cuts down on temperature dips when you add fuel for long cooking, like whole shoulders.

How the heck did we get a reputation as a BBQ nation? Just listening to you guys I'm amazed. Heck.... When we bbq its a couple of stacks of brick each end, a fire in the middle and an iron plate and wire rack slung between the two.

That's actually a better rig than I started with. Not joking at all.

I started with stacked bricks on an asphault parking lot that wasn't used on weekends, with racks that were once shelves in my mother's refridgerator. I cooked 8 full racks of ribs at a time. Neighbors and family bought the racks of cooked ribs for $12 apiece, which, after my costs netted me a whopping $40 for a weekend's work. Beat the heck out of mowing yards, and I learned a lot. I was a grown man by the time I had a grill good enough for whole shoulders, which became my favorite thing to do.
