Perfect size fish, Dave. We had trout that size for breakfast on the Current River a few miles south of where Harry lives, at the Ark/Mo line in the 1970s and 80s. We put the canoes in near Mammoth Springs at Thayer, Missouri, came down the first day to Many Islands Camp, spent the night under the stars, got up and fished for breakfast with salmon eggs on tiny ultralight spinner jigs, then a lazy paddle with cigars down to the small falls, through the gentle rapids and into Hardy Arkansas. The Spring River was nearby and was great for canoes, too, but that was a workout all the way. The Current River (with fresh trout for breakfast), would cure whatever ailed you- beautiful, full of fish, easy paddle down the river.

I did the bacon, too, but we wrapped it around the outside of the filets, dipped them in batter and pan fried them in a big old skillet that somebody's grandmother contributed years ago. One of our guys was a wizard with a filet knife. I never could do trout. Catfish, bass, perch, crappie, no problem, but with trout I just made a mess. Have you ever had trout encrusted in pecans? Wow. Its like one of your paint jobs. Every time you have trout afterward, its all you can think about.

Crappie??? You guys have a fish called Crappie?? That really isn't a name to inspire one to try eating it.

It's the best eating fish there is. I have had them all during my travels, and nothing beats good old crappie I caught myself and fried up.

Now I'm hungry.

Ok...I am not a fish eater. Catcher yes... But there aren't many species that I like the flavour of (can't handle trout or salmon). I'm not sure I could face up to trying a crappie.

Just to complicate things, where I'm from, its Sac-a-lait or crappie (soft "a", as in "ah"), but where I live now, its crappie (short "a", as in crap, which is phonetically correct according to the spelling).
